🇪🇸 Spain: Tarta de Santiago—Traditional Spanish Almond Cake
Ingredients
Cake
- 2 ¾ cups almond flour
- 1 cup white sugar
- 6 eggs
- 1 shot of Brandy
- Zest of 1 lemon grounded
- Pinch of ground cinnamon
Sauce
- 2 ½ cups sugar
- 3 cups mixed organic berries
- Juice of 1 lemon
Instructions
- Preheat oven to 350ºF.
- Mix the eggs and sugar until well combined, when the mixture starts to become lighter in color.
- Add the almond flour, lemon zest, and cinnamon and mix until combined (try not to overmix).
- Pour the batter into a greased round cake pan and bake at 350ºF for 25 minutes or until golden.
- Once cooled, sprinkle powdered sugar on top.
- For the sauce, cook the berries, sugar and lemon juice on low for 20 minutes. Mix well with a blender. Strain and chill in fridge for two hours.
- To serve, drizzle sauce on individual plates and garnish with fresh berries or mint (optional).
