🇪🇸 Spain: Tarta de Santiago

🇪🇸 Spain: Tarta de Santiago—Traditional Spanish Almond Cake

Ingredients

Cake

  • 2 ¾ cups almond flour
  • 1 cup white sugar
  • 6 eggs
  • 1 shot of Brandy
  • Zest of 1 lemon grounded
  • Pinch of ground cinnamon

Sauce

  • 2 ½ cups sugar
  • 3 cups mixed organic berries
  • Juice of 1 lemon

Instructions

  • Preheat oven to 350ºF.
  • Mix the eggs and sugar until well combined, when the mixture starts to become lighter in color.
  • Add the almond flour, lemon zest, and cinnamon and mix until combined (try not to overmix).
  • Pour the batter into a greased round cake pan and bake at 350ºF for 25 minutes or until golden.
  • Once cooled, sprinkle powdered sugar on top.
  • For the sauce, cook the berries, sugar and lemon juice on low for 20 minutes. Mix well with a blender. Strain and chill in fridge for two hours.
  • To serve, drizzle sauce on individual plates and garnish with fresh berries or mint (optional).
